Granola Bars

4 Cups Oats

2 Cups Organic Flour or Wheat Flour

1 tsp Ground Cinnamon

1 tsp Salt

0.75 tsp Baking Soda

1 Cup Brown sugar

0.5 Cups Extra Virgin Olive Oil

0.5 Cups Chopped Nuts or Baby Cashews

0.5 Cups Frozen Cranberries

4 tbsp Organic Honey

3 medium Eggs or 2 large Eggs

1. Mix the ingredients in order starting with oats, flour, spices and sugar.
2. Add Oil, nuts and cranberries and the rest of the ingredients in a large bowl and mix with a wooden spoon
3. Prepare tray by placing wax paper or aluminium foil on the bottom
4. Spread the dough on the tray and pat down with spoon to even
5. Bake at 375 °C for 25 minutes or until there is a colour change
6. For easy clean up, use wax paper or aluminium foil on the tray and to cover while baking
7. For low fat, use egg substitutes or water instead of oil, but bake at 275 °C
