Cocoa Oat Cookies

1 Cup Oil

2 Cups Brown Sugar

4 Medium or 3 Extra large Eggs

3 Cups of Organic All-Purpose Flour

2/3 Cups of Organic Cocoa

1 tsp Baking Soda

1 tsp Salt

1 tsp Ground Cinnamon

6 Cups Organic Oats

1. Mix the ingredients in order starting with oil, brown sugar and eggs.
2. Add the rest of the ingredients in a large bowl and mix with a wooden spoon
3. Prepare tray by placing wax paper or aluminium foil on the bottom
4. Drop the dough on the tray and pat down with spoon to even or choose your own shape
5. Bake at 325 °C for 15 minutes or until there the cookies stop rising
6. For easy clean up, use wax paper or aluminium foil on the tray and to cover while baking
7. For low fat, use egg substitutes and water instead of oil, but bake at 300 °C

Makes 6 -8 dozen depending on the size
